Quantities for 4 people, from the Marché Facile assistant’s recipe sheet. Ingredients link to product pages in the catalogue — the day’s price is on the product page, never frozen here.

Ingredients

IngredientQuantity (4 people)In the catalogue
Haricots secs rouges 300 g Haricot Rouge VRAC
sold loose (500 g for the red); soaking the day before recommended
Riz 600 g RIZ Rizière
sold in 5 kg bags: the quantity bought exceeds what the dish needs
Poisson frais à frire (accompagnement) 800 g Maquereau Frais
Note: Fried fish almost always goes with watché; it is fried separately while the rice cooks.
Tomate fraîche (sauce) 3 Tomate Fraiche
Concentré de tomate (sauce) (optional) 2 tbsp Concentre DE Tomate PATE Alyssa
Oignon 2 Oignon Blanc
Piment frais 2 Piment Frais
Huile (sauce et friture) 15 cl Huile DE Tournesol AYA
Note: Neutral oil for frying the fish; a drizzle of red oil over the finished rice is the Beninese habit.
Cube d'assaisonnement 2 cubes CUBE Maggi Poulet
sold in packs of 10 cubes, the smallest size in the catalogue; the rest keeps for your next sauces
Sel 1 tsp GROS SEL FIN IODE
Tiges rouges ou feuilles de sorgho / mil (coloration traditionnelle) (optional) 1 handful Already at home (assumed to be at home)
Note: Not in the catalogue (flagged during prospection): they colour the rice reddish-brown; without them, the dish tastes the same but is paler.
Eau about 1.5 L Already at home (assumed to be at home)

Preparation

Rice and red beans cooked in the same pot (the beans go in first, the rice joins them), served with a spicy tomato-onion sauce, fried fish and a drizzle of oil. This is atassi from Benin and Togo and watché from Ghana (waakye). In the traditional version, red stalks (atassi) or sorghum or millet leaves (waakye) colour the rice during cooking; these leaves are not in the catalogue, so the dish remains itself without them, just without the colour. In Ghana, the plate is often completed with a hard-boiled egg and spaghetti: that is a side-dish variant, not the base, so add them to the basket only if the customer asks for the full Ghanaian version.
