Thick, soft pancakes cooked in an oiled pan (traditionally in an dimpled pan), from a batter fermented overnight. Hausa and northern Nigerian base (waina): soaked then ground rice, loosened with a portion of the same cooked rice blended into a porridge, yeast, a little sugar and salt. Benin variant: the batter is made with millet flour (or half rice, half millet) and a very ripe sweet banana, mashed, replaces part of the sugar. Rice flour is not in the catalogue: grind soaked rice yourself, or use ready-made millet flour. A pinch of potash for some Hausa cooks, and a little blended onion for others: touches, not the base. Serve lukewarm, plain, with sugar, honey or a sauce.
