🍽️ Koki (gâteau de niébé à l'huile rouge, cuit en feuilles) et ses variantes

Quantities for 4 people, from the Marché Facile assistant’s recipe sheet. Ingredients link to product pages in the catalogue — the day’s price is on the product page, never frozen here.

Ingredients

IngredientQuantity (4 people)In the catalogue
Base écrasée — niébé / haricot cornille (variantes : maïs ou pistache) 500 g Haricot Blanc VRAC × 2
soak 2 h to overnight, then peel carefully: it is the peeling that gives a light koki
Note: BASE: niébé. In the catalogue, dried beans are listed as "haricot blanc / rouge vrac"; niébé (cornille) is not yet listed under its own name — flagged during prospection. VARIANTS that replace the niébé, never in addition: koki maïs = 500 g of maize (grains or flour); mets de pistache = 500 g of pistache paste (pumpkin seeds), often with meat or smoked fish in the paste.
Huile de palme rouge 25 cl Huile DE Palme Rouge Naturelle
sold in 1 L bottles: the quantity bought exceeds what the dish needs, the rest goes into other sauces
Piment frais 2 to 3 Piment Frais
Sel 1 tsp GROS SEL FIN IODE
Feuilles de bananier (cuisson en paquets) (optional) 4 to 6 large leaves Already at home (assumed to be at home)
Note: Not in the catalogue (flagged during prospection): the paste can also be cooked in airtight containers or in an aluminium foil parcel, minus the aroma of the leaves.
Eau about 25 cl of lukewarm water (dough) + steaming Already at home (assumed to be at home)

Preparation

Savoury cake steamed in leaves: a paste of niébé (cowpea), peeled and mashed, loosened with warm water and beaten with lukewarm red oil, salted and spiced, then steamed in packets. Success rests on two steps: warm the oil well before incorporating it, and stir the paste between each step. Named variants: koki maïs (known as 'tenue militaire', maize paste instead of niébé, same cooking); moin moin nigérian, the same niébé paste with a hard-boiled egg or smoked fish placed in the centre (to add to the basket if the customer chooses this variant); and mets de pistache, where pistachio paste (pumpkin seeds) replaces the niébé, often with meat or smoked fish. Garlic appears only with a few cooks: it is a personal touch, not the base.
